I'm having trouble with the water reflecting blue up onto the ceiling which isn't very realistic. here is an example.

It isn't realistic because your water material is very unrealistic.

Try something like this instead:
diffuse level - 0
translucency fraction - 0
reflection
  level - 1
  IOR - 1,33
  glossiness - 1
refraction
  level - 1
  IOR - 1,33
  glossiness - 1
  color - 255, 255, 255
absorption color - 225, 255, 255
absorption distance - set it to your likeness

For these settings to work, your water mesh must to have volume (box).
