Thanks for the interest guys, nothing really complex on those tests I made for the achwassolls. For the ice cream, I've used a simple creamy-white color base with Roughness 0.6 and IOR 1.35 (Milk). Instead of Volumetric scattering, I chose to go with Subsurface Scattering, amount 1.0 Rad=0.5cm and a pinkish-yellow color. Note that base color might benefit from CoronaAO with an outside +inside operation to add variation in crevices and around the chocolate chips. A simple displacement map for the surface irregularities, any stucco like would work for ice-cream.
For chocolate chips, you can scatter a voronoi fractured geometry with some noise and smoothing or simply any set of stones that look like cracked solids (quixel bridge). What makes the difference for both the chips and the cream is that Sheen is great at emulating the frosting effect around the objects, so feel free to play around with values. I will try and export it to a seamless mat. so there is not going to be a need to scatter, rather rely completely on disp. alone. Also still looking into achwassolls request.
