Hello,

If I want to composite a 3D model into a photo, I've always set it up this way.
Horizontal plane or floor with image texture set to frontal.
Background or vertical plane with image texture set to frontal.
Sky with HDRI.

It's mostly working except there is a difference in brightness of the horizontal plane and vertical plane.
I can get the brightness of the two planes to match if I add the image to the self illumination channel of the texture, but then I get no shadows.

Any ideas would be great, thank you.

Did you try to use shadowcatcher? It is meant exactly for that purpose.
