I'd like to know if it's possible to use an HDRI lighting for your scene, or the default corona sky and yet have the sky be a different texture. In this case i need the HDRI skies lighting for a differently textured sky.

Sure it's posible. Go to render setup>scene>scene enviroment activate directly visible override and put there texture that you would want to be visible as sky, but wouldn't infulence lighting at all.

I've got a new problem now. The sky has magically decided that it won't be affected by the modification of the sky objects texture tag (the offset/length of the sky) and it stays to default. Why is that?
