So I decided to built a new WS and want to ask for advice here

CPU: Threadripper 1950x - 809 euro
MB:    MSI X399 SLI PLUS - 289 euro
GPU: Gtx 1060 - 275 euro
RAM: not sure here which frequency and amount to buy..
PSU: please advise

I would like to spend around 2k , the less the better :)

I've only built Ryzen 7 systems so far, but they share the memory benefits, so get the fastest memory you can without overpaying.
At the very minimum 2400MHz, but better 2666MHz and up.
I'd suggest 16Gb sticks, so at least 32Gb total for starters.
Memory is so expensive right now, that you'll probably go over budget with anything too fancy or if you need 64Gb :(

For PSU, a good Seasonic, Corsair or EVGA unit with 700w or more with at least Gold rating.

You also missed a cpu cooler, which specific for TR4 socket. I'm always for good air, so Noctua NH-U14S TR4-SP3 would be my pick. But that depends on your local availability.

Do wait for other opinions, I'm sure many have built Threadripper systems recently ;)

I decided to use this new build as a node and keep my dual xeon as WS

this is final build (gtx1060 is going to replace my current gtx660 ) also I have one spare ssd to use in node so i guess i am good to go

Looks nice!  I recently built a 1950x system and ran into some memory compatibility issues.  Have you checked the 'approved list' on the motherboards website?  I had to return my first set, but that might be unusual.

Most of the TR4 motherboards have a double CPU power connector. This has a double 8 pin connector. Not sure if you need to connect both of them if you are not going to overclock the system, but for system stability and the future possibility to overclock it may be better to have a power supply with 2 CPU connectors. This power supply has only one.
(Power supplies like Corsair HX850 or Seasonic Focus plus 750FX have 2x 8pins CPU connectors)
