So, I was rendering with an HDRI and I think it's looking a bit dark even though I turned it a good bit up. So I thought "I'll just increase the exposure in the frame buffer" and it's greyed out. What do I do?

You probably have a physical exposure set or something, press 8 and remove it.

Scroll down VFB Post tab and look for Info section, there you should find explanation why EV is greyed out.
