I'm a little confused about the Sky and Sun in Corona. I'm making an outdoor scene and want to use an HDRI for reflections at least. Should I just use the Sky with a Light Material/HDRI alone or is there a time to also use the Sun object? Any insight would be appreciated.

Sure you can use the Sun with an HDRI. It helps to increase the HDR sun's lighting or make those shadows sharper. It's easier to have the sun object emulate the HDRI sun as you can customize a lot of settings,
If you just want the HDR map for reflections, got to the scene environment tab in the Corona render settings and add the material to the reflections override. Don't forget to enable the checkbox next to it,

Take a look at https://hdrihaven.com/ the images on here are unclipped so you will probably find you don't need a sun.

Yeah, I'm using an unclipped HDRI from that site. I was just trying to understand if I needed the sun at all. Thanks.
To add to that site, Greyscale Gorilla is release a set of 85 HDRIs with up to 30 stops of range. Decent price too.
