Good morning to all
Download crown to test it and when rendering, the temperature of the motherboard and processor goes up instantly very much. The workstation has six months and with other software I have no problems. When it begins to render the fans are full up. It is normal? Thank you

Yes, this is normal. Rendering is one of the most cpu intensive tasks, so expect higher temps and fan speed while rendering.
As for those 72c, that is also kind of ok, depending on what cooler you have.

If it's overclocked,  no problem. If it's stock, yes. I hope you are using a good after-market cooler =)
With my old I7 970 @4.00 Ghz, I have 72° C. I can also go to 80°C (4.2Ghz), but in my experience, it's too much.
My cooler is a huge Termalright, with double Noctua FAN 12cm, similar this.
Don't forget a good thermal paster  (dimension must be like a small rice grain)

All modern Intel processors have the voltage set higher than is needed. You can undervolt your CPU in bios with negative voltage offset, or simply find the lowest stable volatage for 100% load. You will see significant temperature and consumption drop under load. For example my xeon e3-1231v3 @3.8GHz is fully stable working under load at 0.98V with max. temperature 56°C with old arctic freezer 7 pro rev.2 ~1400rpm
